VIJAY K. JUNEJA is Lead Scientist and Supervisory Microbiologist at the Eastern Regional Research Center, Agriculture Research Service, U.S. Department of Agriculture, Wyndmoor, Pennsylvania. The author, coauthor, editor, or coeditor of numerous publications, he is a Professional Member of the Institute of Food Technologists and a member of the International Association of Food Protection, the Interagency Botulism Research Coordinating Committee, and the Association of Indian Veterinarians in America, among others. An editorial board member of the Journal of Food Protection, Dr. Juneja received the B.V.Sc. and A.H. (Hons.) degree (D. V.M.) (1978) from the G. B. Pant University of Agriculture and Technology, Pantnagar, India, and the M.S. degree ( 1988) in animal science and the Ph.D. degree (1991) in food technology and science from the University of Tennessee, Knoxville. JOHN N. SoFOs is a Professor in the Department of Animal Sciences at Colorado State University, Fort Collins. The author, co-author, editor, or co-editor of numerous journal articles, abstracts, book chapters, and books, he is a Fellow of the Institute of Food Technologists and the American Academy of Microbiology and a member of the International Association for Food Protection, the American Academy of Animal Science, and the American Meat Science Association, among others. A Scientific Co-editor for the Journal of Food Protection, Dr. Sofas received the B.S. degree ( 1971) in agriculture from Aristotle University, Thessaloniki, Greece, and the M.S. degree (1975) in animal science and the Ph.D degree (1979) in food science from the University of Minnesota, Twin Cities.
