Being a non climacteric fruit litchi undergoes little or no compositional changes after harvest. Commercially it is essential to recognize the harvest maturity. Suhrita Chakrbarty, Ph.D in Horticulture, is Associate Professor in Bidhan Chandra Krishi Viswavidyalaya ,West Bengal, India. She is involved in World Bank funded National Agricultural Innovation Project and also leading four action research projects related to Dry Flower and Fruit Processing. She has published seventeen papers and two books.
