Increasing demand for ready-to eat food has encouraged the production and safe of minimally processed fruits and vegetables. This fresh-produce undergoes extensive microbial contamination during processing steps. The present study was designed to include three parts of work. Prof. Serag completed his PhD in Ecology from Mansoura-Lund Universities Channel System, 1989. Currently, working as Professor of Ecology at Damietta University. He published more than 108 research papers in national and international journals and 18 books. He is interested in plant diversity and management of natural resources.
